Does your family enjoy eating granola for breakfast? If your household is anything like ours, there is most probably never enough granola to be found on your pantry shelf. To cut down on some of the cost of this product, I began to experiment with different recipes combining them together until I settled on Vanilla Almond Raisin Granola and found it to be the BEST GRANOLA EVER!
To prove to you how good this granola is, let me share with you what happened when I gifted my neighbor with a jar full of this delicious goodness. This granola stirred his taste buds so much that after years of having only a cup of coffee for breakfast, he began to sit down and actually eat. Now I only have to make sure he has a sufficient supply of granola at all times!
How to Make Vanilla Almond Raisin Granola
Ingredients:
- 5 cups old-fashioned rolled oats
- 1 teaspoon ground cinnamon
- ¼ teaspoon salt
- ¾ cup pure maple syrup (or more if you tend to like a sweeter cereal)
- ½ cup coconut oil
- 2 tablespoons pure vanilla extract
- 1 ½ cups slivered almonds
- 1 ½ cups raisins
Instructions:
- Preheat oven to 300oF (150oC).
- Line two rimmed baking sheets with parchment paper (they should fit side by side in your oven).
- In a bowl combine oats, cinnamon, and salt.
- Whisk together maple syrup and coconut oil. (Depending on weather, you may need to warm them up first to liquefy the oil.)
- Add vanilla extract to the liquids.
- Pour the liquids over the oats and coat until all the oats are moistened.
- Spread onto the baking sheets and bake for 12 minutes.
- Take out of the oven, stir almonds into the granola and bake for additional 18 minutes (depending on your oven, you may need to add a few minutes to your baking time). [If you add the almonds to the mix at the beginning, they have a tendency to taste slightly burnt.]
